COTTONY GELATINIZED SUBSTANCE, PULPY JELLY USING THE SAME AS RAW MATERIAL AND ITS PRODUCTION

PURPOSE:To obtain the subject jelly, capable of imparting feeling of pulp to products, and rich in taste and visual fancy without using pulp or fruit preparation by mixing a chitosan solution with a solution of phosphoric acid (salt) and then gelatinizing the obtained mixture. CONSTITUTION:The objective substance obtained by mixing a chitosan solution with a solution of phosphoric acid (salt) which is prepared by previous double emulsification (W/O/W type emulsion), dispersing an edible colorant therein and gelatinizing the resultant mixture. The aforementioned substance is stirred, finely divided and mixed with a gelling agent-containing jelly mix solution, thermally sterilized, cooled and solidified to afford a pulpy jelly in which the finely divided and colored cottony gelatinized substance is dispersed in a jelly mix.
