PURPOSE: To obtain a fat compsn. which contains >=1/2 weight ratio fats contg. unrefined olive oil and polyol fatty acid polyester respectively at prescribed weight ratios and has the palatability extremely resembling the palatability of refined olive oil. CONSTITUTION: This fat compsn. contains >=50%, by weight fats and the fats contain 0.5 to 40% unrefined olive oil and 5 to 80%, more preferably 15 to 80% polyol fatty acid polyester. If desired, <94.5% refined triglyceride oil may be incorporated into the fats described above. The production of the fat compsn. contg. the olive oil of the conc. decreased is possible while the characteristics of the olive oil are maintained by the compounding described above. In addition, the advantages of the compsn. are particularly evaluated in the compsn. contg. >=90wt.% fats, for example, salad oil. |
