FIELD: chemistry. ^ SUBSTANCE: invention relates to production of canola protein isolates. Canola protein isolate predominantly consists of 2S canola proteins and has improved solubility, has high content of 2S canola protein and has low content of 7S canola protein. Canola protein isolate is prepared by heat treatment of aqueous supernatant from formation and precipitation of canola protein micelle, which results in precipitation of 7S protein which is then removed. Alternatively, the canola protein isolate may be derived from a selective membrane procedure in which an aqueous canola protein solution containing 12S, 7S and 2S canola proteins is subjected to a first selective membrane technique with retention of 12S and 7S canola proteins in a retentate, which is dried to obtain a canola protein isolate mainly consisting of 7S canola protein, and passing 2S canola protein through the membrane. The permeate is subjected to a second selective membrane technique with retention of 2S canola protein and passing low molecular weight contaminants through the membrane, and the retentate from the last membrane technique is dried. ^ EFFECT: obtaining novel canola proteins, with high content of 2S protein. ^ 18 cl, 1 dwg, 9 tbl, 9 ex |
