PURPOSE:To obtain the title composition suitable as nutrition supplying food for patients of hepatic disease, etc., treating food, etc., comprising a given amount of a peptide-containing substance having a specific composition prepared by hydrolyzing maize protein with an anzyme, by controlling the blended amount of each of nitrogen compound, carbohydrate and lipid. CONSTITUTION:Maize protein is hydrolyzed with an enzyme (e.g. highly alkali- side protease) to produce a peptide-containing substance which contains peptide having 200-4,000molecular weight and has an amino acid composition wherein an amount of aromatic amino acid is <=3.6mol% based on total amounts of amino acids and a molar ratio of branched-chain amino acid/aromatic amino acid is preferably >=10. Then 5-20wt.% based on dry weight of the peptide- containing substance is blended with a nitrogen compound, a carbohydrate and a lipid so as to give 15-40wt.% nitrogen compound, 50-70wt.% carbohydrate and 0-15wt.% lipid to produce a nutrition supplying composition. |
