METHOD FOR MANUFACTURING CANNED SIDE ORDER BEET ROOTS

FIELD: food industry. ^ SUBSTANCE: invention is related to preserved food industry. According to the proposed method pre-processed beet roots and nisin are packed in jars; the jars are filled with hot water of minimal temperature 90C for 2-3 minutes. After that the water is substituted with solution heated minimum up to 97C. Then the jars are seamed and sterilised in autoclave at pressure 157 kPa and temperature 116C. ^ EFFECT: decrease of sterilisation duration decreases combined with enhanced thermal treatment uniformity.
