PURPOSE:To enable to readily eat a fried food in a good taste only by simply heating the preliminarily fried food when eaten, by preliminarily frying a non- fried food comprising a material coated with a specific coating material through a binder under a vacuum atmosphere. CONSTITUTION:A non-fried food such as a non-fried food material, non-fried cutlet or croquette comprising a vegetable, mushroom, fish, shellfish, livestock meat, cooked raw material or croquette material coated with a coating material mainly comprising bread flour, cracker flour, starch or wheat flour through a binder is preliminarily fried under a vacuum atmosphere. While the quality and water content of the inner frying material are maintained, only a prescribed amount of an oil is thereby absorbed in the coating material and the water content of the coating material is reduced to 10-30%, followed by, if necessary, freezing the preliminarily fried food to provide the objective food. |
