摘要 FIELD: food industry. ^ SUBSTANCE: invention is designed to be used in meat industry for producing the meat-vegetable tinned food. The product contains preliminary blanched whole carcases of quails, that are fed during 7 weeks to weight not more that 100 gr, pleurotus mushrooms browned with onions in vegetable oil, bone broth, prepared with salt, and salt. Quail meat and mushrooms are taken corresponsdingly in the ratio 1:2-4:5. The method includes packing the product into glass jars with capacity of 500 ml. During this process the quail carcases are put two of a kind in one jar vertically with leglets upwards, then mushrooms and broth are put. Thermal processing is performed after sealing the jars with autoclavation during 40-45 minutes at temperature of 120C. ^ EFFECT: invention provides obtaining of the preserved products with functional purpose made of quail meat with improved organoleptic properties and increased biological value, simplification of process from raw materials preparation to finished product production. ^ 2 cl, 2 ex, 1 tbl
