The agglomerates contain a binder, e.g. guar gum in amt. of up to 3% by wt. of the total particles, and have an apparent density, porosity and speed of absorption such that on contact with an appropriate amt. of liquid, e.g. water, the practically uniform, homogeneous paste formed is suitable for extruding into chips for frying. The apparent density is pref. 0.25-0.50 g./m. the porosity is 0.6-0.9 and the rate of moisture absorption is 0.12-0.5 g. water/g. product/sec. Reconstitution is pref. effected with 1.5-2.5 pts. liquid per pt. particles, over 20 secs.-15 mins, and the extruded chips are dried without influencing their porous structure. |
