Freeze drying of non readily crystallisable - fruit juices

The starting product is maintained at a temp. at least 5 degrees C below the freezing pt. of the product in a mechanically agitated cooler for a period of time required to obtain a friable consistency whereupon the pre-frozen product is dried following cooling to below the eutectic temp. of the product.
