The ingredient is suitable for addition to coffee extracts and foodstuffs having a coffee flavour. There may be also added to the foodstuff a 2-alkoxy alkyl pyrazine in which at least one of the alkyl substituents has 2 to 12 carbon atoms. The addition of the flavouring ingredient to coffee, coffee extracts and dextrin is exemplified.
