PURPOSE:To provide food resembling a large-size shrimp in shape and taste, at low cost, by compounding peeled tiny shrimps or shrimp offal formed to a proper size, with a binder composed mainly of ground fish meat and egg white, and forming the mixture to the size and shape of a peeled large-size shrimp. CONSTITUTION:Peeled tiny shrimps or shrimp offal are formed to lumps 1 of proper size, and mixed with a pasty binder 2 composed mainly of ground fish meat and egg white. The mixture is formed to the size and shape of a peeled large-size shrimp, and if necessary, heated to bond the lumps. The fish is pref. croaker, Atka mackerel, lizard fish, walleye pollack, etc., and the amount of egg white is 15-35% of the ground fish meat. The meat mixture may be added with 0.1-0.5% of a mixture of phosphates to improve the water retainability, or 0-10% of wheat flour, gluten and/or starch to impart the cooked food with moderate resistance to the teeth. |
