摘要 PURPOSE:To easily obtain in high safety the title material extremely mild in digestion and absorption, having taste and mouth feeling similar to those of conventional starch by bringing a fatty acid compound, in the presence of a solvent, into contact with a starch of specified amylose content. CONSTITUTION:(A) 100 pts.wt. of a starch containing 25-60wt.% of amylose is brought, in the presence of (B) pref. 10-100 pts.wt. of a solvent (e.g. water, an alcohol), into contact with (C) pref. 0.5-20 pts.wt. of a fatty acid compound (pref. an amphiphatic substance, esp. fatty acid ester), thus giving the objective material >=10% in the amylose occupancy rate in the component A by the component B.
