PURPOSE:To immerse beans stably in a short time and efficiently irrespective of temperature in the open air and to suppress loss caused by elution of protein, by wetting epidermis of beans, making fine cuts on the epidermis and then immersing the beans in warm water. CONSTITUTION:Epidermis of beans is wetted, fine cuts are made on the epidermis and then the beans are immersed in warm water at 30-40 deg.C for 120-180 minutes. |
