发明名称 PREPARATION OF ROASTED EGG
摘要 PURPOSE:To prepare a roasted egg having excellent long-term storage stability, good appearance and high commercial value, by circulating saturated steam in a heating oven to keep the inner temperature of the oven at a specific level and heating the unopened raw egg in the oven. CONSTITUTION:Surface of egg shell of an unopened raw egg such as chicken's egg is washed and the egg is introduced into a heating oven. Saturated steam is circulated in the oven until the inner temperature of the oven reaches 100 deg.C and the oven is maintained to the state for about 5 min to wash out materials exuded to the surface of the shell. Thereafter, the temperature in the oven is raised to a prescribed level above 100 deg.C to obtain the objective roasted egg.
