PURPOSE:To provide the title food favorable in palatability, not causing getting out of shape when boiled, also giving sufficient mechanical strength when picked with a pair of chopsticks, comprising fine granulated bean-curd refuse and a thermocoagulated material. CONSTITUTION:The objective solid food where bean-curd refuse <=100mu in mean granular size has been homogeneously dispersed in a curdlan thermocoagulated material. The present food contains 1-25wt.% of the bean-curd refuse and 0.1-8wt.% of the curdlan, each on a solid basis. |
