Functional fermented soy products containing a betaine component are provided to ensure the functionality of preventing arteriosclerosis and hypertension and protecting live function as well as improved overall palatability. Functional fermented soy products containing a betaine component are prepared by addition of 3 to 15% by weight of a betaine-containing component during the manufacture of traditional fermented soy products and aging. The betaine-containing component is derived from any one selected from the group consisting of Lycium leaf, Lycium fruit, radish, mushroom, carrot, apricot and beet. The fermented soy products are any one selected from the group consisting of red pepper paste, soybean paste, fermented soybeans, seasoned soybean paste and soy sauce. The betaine-containing component is a mixture of 100 parts by weight of Lycium fruit powder and 25 to 400 parts by weight of pollen. |
