Antioxidants for fatty substances e.g. tallow and lard, comprise the products of the alcoholysis reaction of an ester of a fatty acid with a hydroxy acid or an ester of a hydroxy acid.ALSO:Antioxidants for fatty substances (lipids) comprise the products of the alcoholysis reaction of an ester of a fatty acid with a hydroxy acid or an ester of a hydroxy acid. The fatty acid ester preferably has 10 to 34 and preferably an even number, of carbon atoms in the acid residue, and 2 to 12 carbon atoms in the alcohol residue, for example, palmitic, stearic, and lauric acid, mono-, di-, or tri-glycerides. Hydroxy-acids may be ascorbic, citric, tartaric and lactic acids and their esters with alcohols of 2-12 carbon atoms are also mentioned. An excess of hydroxy acid or ester is used for the alcoholysis. Examples describe the reaction of ethyl palmitate with citric acid or tartaric acid; methyl, ethyl, or propionyl citrate or tartrate with ethyl, butyl, or propionyl palmitate; lauryl citrate with ethyl palmitate; ethyl stearate with tartaric acid; ethyl lactate with ethyl stearate; glycerol palmitate with citric, tartaric and lactic acids; and glycerol stearate with citric acid. |
