摘要 A modified gelatine is prepared by heating a mixture of gelatine and either ascorbic acid, a mixture of ascorbic acid and citric acid or a mixture of citric acid and sorbose in the presence of sorbitol. The term "ascorbic acid" includes iso-ascorbic acid. Either type A or B gelatine having a bloom within the range 30-100 may be used.ALSO:Milk is fortified by the addition of vitamin beadlets comprising a fat-soluble vitamin-containing material, and in cases where said material is other than a -tocopherol, a -tocopherol, and a modified gelatin. The latter is prepared by heating a mixture of gelatin and either ascorbic acid, a mixture of ascorbic acid and citric acid or a mixture of citric acid and sorbose in the presence of sorbitol. The term "ascorbic acid" also includes iso-ascorbic acid. The vitamin beadlets may optionally contain antioxidants e.g. butylated hydroxyanisole, butylated hydroxytoluene, platicizers e.g. sorbitol or corn syrup, buffers e.g. sodium citrate or colouring agents. The vitamin-containing material may be any material which contains vitamins A, D, E or K e.g. vitamin A acetate or palmitate. The vitamin beadlets may be initially dispersed in a liquid vehicle to form a concentrate which is subsequently added to the milk.ALSO:Vitamin compositions in beadlet form comprise a fat-soluble vitamin-containing material, and (incases where said material is other than a -tocopherol) a -tocopherol, and modified gelatin, optionally with antioxidants e.g. butylated hydroxyanisole, butylated hydroxytoluene, plasticisers e.g. sorbitol or corn syrup, buffers e.g. sodium citrate or colouring agents. The modified gelatin is prepared by heating a mixture of gelatin and either ascorbic acid, a mixture of ascorbic acid and citric acid or a mixture of citric acid and sorbose in the presence of sorbitol. The term "ascorbic acid" also includes iso-ascorbic acid. In a preferred method of manufacturing the vitamin compositions, an oil phase consisting of the vitamin-containing material, or (in cases where said material is other than a -tocopherol) a mixture thereof with a -tocopherol and optionally an antioxidant is emulsified with an aqueous solution containing the modified gelatin. The emulsion may be converted into beadlets by passing the emulsion through a revolving spray head and introducing the droplets into a suspension of collecting powder in air. The collecting powder may be a free-flowing starch ester, resistant to water-wetting, known as "Dry-Flo". Specified fat-soluble vitamin-containing materials include vitamin A acetate and palmitate.
