PURPOSE:To cook the head of tuna to an easily handleable and eatable state having delicious taste and to effectively utilize head of tuna by slicing a whole tuna head in frozen state and cooking the sliced head with heat. CONSTITUTION:Head of tuna is cooked to a delicious food by slicing a frozen whole tuna head with a band saw, etc., e.g. parallel to the axial line of the fish body to a thickness of 1-5cm and cooking the slices with heat. As an alternative method, the above tuna head is sliced as a whole, packed in vacuum and heat-treated to enable the cooking of the tuna head and obtain a delicious food. |
