Fresh fruit flavour is imparted to food compositions by adding thereto 2-alkyl-2- pentenoic acids, preferably 2-methyl-2- pentenoic acid, preferably in an amount of 0.5-25 ppm. The acid may be added admixed with flavouring materials and a carrier selected from solvents, non-solvents in combination with an emulsifier, and particulate solids. The flavouring material may be a strawberry flavour being an ester, ether, aldehyde, alcohol, ketone, or organic acid. |
