The goose livers are arranged inside a pie crust envelope and the prepn. is cooked for 10 mins in a hot air oven, this pie crust completely insulates the livers by forming a wall of closed cells. A small dose of ascorbic acid prevents any oxidising effect on the internal face in contact with the unstable product. The pie is then conveyed to a microwave oven which heats the heart of the product by molecular friction; the livers are cooked in 2 mins. without burning and, above all, without evapn. The semipreserved pies can be kept for 20-30 days before consumption but they can be kept as preserves indefinitely if kept in vacuo in a sealed container at a low temp. |
