PURPOSE: A process of preparing liquid mushroom mycelium using a cereal medium containing rice, barley, wheat, sorghum, millet, soybean, etc. is provided. Whereby, the product can be easily produced at home and edible without anxiety because cereals are used as raw material. CONSTITUTION: Cereals such as rice, barley, wheat, sorghum, millet, soybean, etc. are soaked in boiling water, steamed, dried to a moisture content of 50 to 70% and filled in a spawn bottle, heated at 121deg.C and then maintained at the same temperature for 20min or more. Thereafter, stains are inoculated into the medium, cooled to 25deg.C or less and cultured at 20 to 30deg.C for 10 days to produce mushroom mycelium.
