摘要 The present invention relates to a method of reducing salt contents of processed meat products using gamma-aminobutyric acid (GABA). According to the present invention, provided is low-sodium processed meat products having low sodium contents and maintaining the same level of salty taste and physical properties of processed meat products as GABA is used as a salty taste enhancer to reduce the amount of salt used in the processed meat products.
