A method for manufacturing a fermentation product of edible animals and plants is provided to give storage stability, to improve bio-availability and flavor of the fermentation product, and to shorten fermentation period. A method for manufacturing a fermentation product of esculent animals and plants comprises the following steps of: manufacturing crushed materials of edible animals and plants; manufacturing microbial mixed culture liquid by mixing 5-10% of cereals, 0.5-2% of sugars, 0.5-1.5% of fungi, 0.5-1.5% of yeast, 5-10% of first sterile pure water and second sterile pure water on the basis of crushed materials of edible animals and plants at 27-35°C for 24-36 hours; inoculating the crushed materials with the microbial mixed culture liquid and gaining fermentation products at 30-37°C; and inoculating the crushed materials with 0.5-1.5% of a bacteria and gaining second fermentation products at 33-40°C.
