Scalding water in the scalding tank is kept out of slaughtered pigs lungs by injecting these with a metered amount of 5.5 atmos gauge compressed air from a gun inserted between the 5 and 6th intercostal space and so into the pleural cavities. The water pressure is inferior and so held out, leaving the lungs fit for human consumption and uncontaminated by soiled scalding water.
