<p>A new method of cooling the hot run-off wort in a brewery direct from the brewing copper and without any intermediate vessel prevents the darkening and oxidn. and enables the hot sediment to be removed completely, with a minimum of heat losses. A cone is first set on top of the outlet of the brewing vat outflow valve, with a strainer, and a larger cone over it. After an interval of 15-30 min. after the wort boiling the cooling can begin, using the vat scavenging pump for the circulation. The first frew hectolitres of wort are run into a container and the plate cooler is then inserted. After 20-30 min. the outer cone is drawn and the wort draw-off continues through the inner cone with the strainer.</p> |
