PURPOSE:To obtain bean curd containing Flammulina velutipes Sing. suitable for ingesting soybean ingredients and a mushroom extract by mixing soybean milk with the impasted Flammulina velutipes Sing., stirring the resultant mixture, adding a coagulant thereto and coagulating the obtained mixture. CONSTITUTION:(A) Soybeans are swelled, heated and pulverized in a mixer, etc., to separate bean-curd refuse. (B) About 20-30% Flammulina velutipes Sing. impasted in a mixer, etc., is then added to the obtained soybean milk at about 70 deg.C and the prepared mixture is mixed and stirred. (C) A coagulant is subsequently added and the resultant mixture is stirred and cooled to afford bean curd containing the Flammulina velutipes Sing. |
