摘要 PURPOSE:To prevent reduction in sweetness of thaumatin by blending thaumatin with a specific amount of chitosan (hydrolyzate). CONSTITUTION:(A) Thaumatin, a sweetener is blended with (B) a chitosan (hydrolyzate) in an amount to effectively prevent reduction in sweetness to hinder decrease in sweetness of thaumatin. The amount of the component B effective for preventing reduction in sweetness is preferably 0.0002-100 pts.wt.% based on 1 pts.wt. of the component A. The component A is preferably in a state of aqueous solution coexisting with a coloring matter and/or a polysaccharide.
