PURPOSE:To continuously obtain scrambled eEEs of high quality without using human power by introducing liquid eggs or frozen liquid eggs into a specific device, regulating the temperature, then kneading the eggs and continuously operating the device. CONSTITUTION:Liquid eggs free of eggshells or frozen liquid eggs, water, starch such as a potato, common salt, sugar, a seasoning ground fish meat, etc., are simultaneously or separately added to a twin-screw extruder, having heating functions (for heating to a required temperature with a steam feed pipe 11 connected to a steam discharge pipe 10 in a barrel 4), rotating two feed screws in the same direction and thoroughly biting in the raw materials. The temperature in the barrel 4 is regulated to >=60 deg.C and the raw materials are kneaded. The above-mentioned device is continuously operated to afford the objective scrambled eggs. |
