PURPOSE:To facilitate cooling and preparation of fishes and shell fishes and carry out treatment for making fishes and shellfishes more tasty by subjecting fishes and shellfishes to ultrasonic treatment for applying ultrasonic wave having a specific frequency to fishes and shellfishes. CONSTITUTION:Ultrasonic wave having <=100KHz (preferably 10-40KHz) frequency is applied to fishes and shellfishes kept in frozen state or semi-frozen state of <=5 deg.C (preferably -5 to +5 deg.C) to carry out the objective treatment. Furthermore, the ultrasonic treatment can effectively be carried out by previously applying edible oil and fat and/or seasoning to the fishes and shellfishes and making preparations before the treatment. |
