PROBLEM TO BE SOLVED: To provide a product of chocolate additive with good workability which shows that it can be easily dispersed evenly when added to chocolate which can be manufactured more easily at lower cost. SOLUTION: A chocolate additive is prepared by adding stable crystals of SUS-type triglyceride of 20 or more of carbon of composite saturated fatty acid to oil and fat in paste form of SFC ranging between 0.5 and 20 when the fat is at 20 degrees centigrade. Preferably, the chocolate additive contains 50-90% of stable crystals of 1,3-dibehenyl-2-oleoylglycerol, is a tempering promoter with good workability, can effectively inhibit the generation of fat blooming of chocolate, is efficient in production, and can contribute to a reduction in product costs.
