Micro-organisms of genus Thallophytes, pref. non-chlorophyllic are grown in a medium containing (1) 0.001-0.2% mixt. consisting of: alpha-amylase, beta-amylase, at least 1 enzyme selected from 1,6-glucosidase, hexokinase, amylomaltase, phosphorylases, and xylonase, at least one amino-acid and at least one vitamin, (2) 0.05-0.5% of a compsn. of trace elements. Trace elements pref. comprise (in wt. parts) KCl (1-2), MgCO3 (2-4), K lactate (2-4), CuCO3 (0.1-0.2), FeSO4 (0.2-0.4), Zn(SO4)2 (0.2-0.4) in 1000 parts water. Amino acid, enzyme and vitamin composition may comprise (in wt. parts), methionine (2-60), alpha-amylase (2-60), beta-amylase (1.5-900 x 10-5), 1,6-glucosidase (15-600 x 10-6), at least one of hexokinase, amylomaltase, phosphorylase, xylonase and Schardinger enzyme (15-600 x 10-6) and potato meal (10). Used in food industry in yeast prodn., fermentation of dough for bakeries, pastries and dietetic products, prodn. of beer, vinegar, alcohols and spirits. |
