PURPOSE:To prepare a yeast extract without the yeast smell, by treating the yeast extract with a specific enzymic pharmaceutical, liberating a lipid component, and removing the liberated lipid component. CONSTITUTION:A yeast extract is treated with one or two more enzymes expressed in terms of the potency based on 1000g solid content as follows: >= 25,000 units amylase, >=5,000 units cellulase, >=75,000 units protease and >=50,000 units lipase at 4-7pH (20-60 deg.C) for 1hr or longer to liberate a lipid component. After the treatment with the enzyme, the yeast extract is then heated at 70 deg.C or above to aggregate the lipid component, which is removed by the filtration, centrifugation, etc. |
