<p>A novel process for preparing lipase, which comprises culturing lipase-producing microorganism belonging to Staphylococcus capitis to accumulate lipase in a medium, and collecting lipase from the medium. This lipase has an optimum pH in an alkaline region, and substantially completely convert triglyceride into fatty acid and glycerin, thus being useful for economically producing fatty acid by hydrolysis of fat or oil.</p> |
