In making edible products based on filaments spun from protein solutions, the protein is treated with at least 0.25% of a sulphite. Examples are of preparing tows of spinneret filaments at 80 DEG F. from 14.6% and 14.3% t.s. solutions of soy protein containing sodium hydroxide and 1.5% of sodium sulphite, ammonium sulphite or sodium hydrosulphite, of passing akaline soy protein solutions at 100 DEG F. through spinnerets into baths containing acetic acid and sodium chloride, forming the filaments so formed into tows, stretching them, and treating them with solutions containing acetic acid, sodium chloride and 1% or 5% of sodium sulphite, and of preparing tows of spinneret filaments at 100 DEG F. from a 24% t.s. solution of casein, containing sodium hydroxide and 2% of sodium sulphite.
