A composition for use as a sugar substitute comprises the reduced product of a starch hydrolysate having a Dextrose Equivalent of 1.2-15 per cent (see Div. C3), and contains no reducing groups. The composition may be used in admixture with saccharin or sodium cyclamate, preferably in such proportions to yield a product with a sweetness equivalent to that of saccharose. |
