PURPOSE:To prepare a gratin capable of getting desirable scorch mark and fragrant taste and flavor by a short heating treatment by applying a dairy product and sugars on the top of a cooked gratin. CONSTITUTION:The objective gratin servable by heating with a microwave oven, etc., can be prepared by applying preferably about 2g of a dairy product (preferably cheese powder), preferably about 0.3-3g of sugars (preferably xylose) and an amino acid (preferably having small particle size) to the top of a cooked gratin and preserving the product in frozen state. |
