Lean beef is coarse chopped, together with muscle, liver pieces and onions and mushrooms and pigs fat, cooked in a mould and then cooled ot room heat followed by shock freezing for long-term storage in vacuum packs. The cutlet can be flavoured with pickling salt, marjoram, nutmeg, cooked with a sauce which is added at the chopping stage, as also ice. Cutlet cooks fast without thawing. |
