<p>Mould comprises horizontal circular-section rods, and at the ends of the rods two uniformly operating elastic rings consisting of individual springs mounted firmly but movably in grooves in the rods, to form a closed expandable shape. The rods and springs are made of matl. compatible with foodstuffs e.g., special steel or plastic. Mould is for pressing, drying, smoking, grilling, boiling and frying boned ham and other meats. When the mould is expanded it can be filled with meat, forming a cylindrical shape in which the meat is compressed uniformly on all sides. The dia. of the rods is sufficient to prevent them from cutting into the meat. The mould has a length, dia. and spring pressure conforming to the requirements of the processor, and is constructed to allow free access to smoke, air and heat.</p> |
