The fritter contains 10.97% cured ham, 12.8% Emmental cheese, 5.47% pork loin, 60.33% whole milk, 6.4% butter, 3.66% flour, 0.18% salt, and 0.18% breadcrumbs. It is made by (a) cutting the pork loin into slices; (b) initial long frying of the slices; (c) cutting the ham and cheese in slices; (d) placing the cheese followed by ham over the pork; and pressing to form a core; (e) prepn. of a bechamel sauce from milk, butter, flour and salt; (f) dipping the core in the sauce; (g) coating with breadcrumbs (h) cooling to room temp. and (i) final brief frying and draining off excess oil. |
