<P>PROBLEM TO BE SOLVED: To provide jelly material having favorable digestion in the body while not easily dissolved in the mouth, and usable as material for jelly having stringy and moderately hard to the teeth, to provide a method for producing the jelly material, and to provide usage of the jelly material. <P>SOLUTION: The jelly material is such that gelatine is cross-linked with sugar alcohol. The method for producing the jelly material includes drying water solution containing 10-50 wt.% of the gelatine and 3-15 wt.% of the sugar alcohol, cross-linking the gelatine with the sugar alcohol.
