PROBLEM TO BE SOLVED: To provide a method for producing tea containing 3-amino-1-ethyl glutarimide by processing tea containing theanine, and to provide the tea.SOLUTION: The present inventors devised a method of concurrently analyzing theanine and 3-amino-1-ethyl glutarimide by improving an amino acid analysis method, and by using the improved method, invented a method for producing tea containing 3-amino-1-ethyl glutarimide. The method for producing tea containing 3-amino-1-ethyl glutarimide comprises the steps of: adding green tea containing theanine into a pressure vessel, and blowing saturated steam therein to replace air inside the vessel with saturated heating steam; after the air inside the pressure vessel is completely replaced with saturated heating steam, under an environment of no accompanying liquid according to the saturated vapor pressure curve, processing with saturated steam was performed to cyclize theanine contained in the tea by dehydration to be converted to 3-amino-1-ethyl glutarimide. By adding theanine to green tea to increase the theanine content and processing the tea, there could be produced 3-amino-1-ethyl glutarimide tea.SELECTED DRAWING: None |
