In a process for the recovery of starch and gluten from a dough of wheat flour, wherein water supplied to a recovery region carries away starch while gluten accumulates into lumps in the recovery region, the gluten lumps are subjected to a repeated spreading operation in various directions, whereby the lumps are shredded, flattened and to some extent disintegrated, so that embedded starch granules are uncovered, the gluten being allowed to resume its lump shape after spreading. The apparatus described in Specification 1,094,145 may be used. The dough, from inlet (5), while being sprayed with water from pipes (8-11) (Fig. 1, not shown), is transported cross-wise and lengthwise of trough (3) by means of stirrers (17), blades (21) and scrapers (18) revolving about central shaft (1). In operation, stirrers (17) tear the dough, while starch is flushed therefrom at the imperforate end (6) of the trough, and then scrapers (18) spread and flatten the dough or gluten against the perforated bottom parts 14 through which liberated starch is continually flushed by the wash liquid. During their rotation, scrapers (18) catch gluten lumps, push them along the trough bottom, and repeatedly lift them out of the trough and return them thereto. The scrapers are angled so that the dough or gluten is propelled towards exit (7). Sabre-like means (21) pinch the gluten lumps between their edges and the trough bottom so as to shred the material and expose the starch to the wash liquid. The starch suspension is discharged via pumps (29) and recycled so that gluten particles may be returned to the recovery region. |
