Cocoa powder, which has been subjected to chemical neutralisation and colour intensification by treating it with an alkaline solution, is subjected to simultaneous spreading, compression and drying by being passed between one or more pairs of contacting hollow cylindrical rollers which are heated, one of the rollers of the or each pair rotating at a higher speed than the other to effect the spreading action, the resulting powder, in the form of small flakes, being then pulverised in a grinding mill. The neutralising is preferably effected by kneading natural cocoa powder with a neutralising alkaline solution at a controlled temperature, using a cavity mixer. |
