[Also in Divisions B4 and B5] In a method of moulding and baking a biscuit, e.g. a cornet wafer for ice cream, in a mould of separable parts, the moulding material is an unleavened flour paste containing fatty matter in a minimum proportion of 10% by weight of the ordinary flour in the paste, a proportion of buckwheat flour lying between 1.8 and 5.5% by weight of the said flour, and the mould is opened several times during the baking to allow the escape of steam, and the biscuit is cooled by a gas jet before its removal from the mould. The paste may contain more than 25% by weight of sugar in relation to the ordinary flour. A series of moulds, each comprising separable parts may be conveyed on an endless chain with means for momentarily opening the moulds at several points during their travel during the baking, and gas jets are provided for cooling the biscuits before their removal from the moulds. |
