PRODUCTION OF TREHALOSE AND PALATINOSE

摘要

PURPOSE:To obtain a syrup containing trehalose in high concentration and having light color without using a cleaning process by using a microorganism of genus Agrobacterium or an enzyme produced by the microorganism. CONSTITUTION:Sucrose is converted to trehalose and palatinose by using a microorganism belonging to genus Agrobacterium [e.g. a new microorganism Agrobacterium radiobacter MX-232 (FERM P-12397)] or an enzyme produced by the microorganism. Concretely, the process can be carried out e.g. by immobilizing the above enzyme, packing the immobilized enzyme in a column and passing a sucrose solution having a concentration of 20-60%w/w through the column at 25 deg.C and pH5.5.
