An apparatus for pelleting a liquid or pasty composition comprises a flow producing device (4) for forming a cooling stream; a charging device (10) for introducing the composition into the cooling stream in the region of a drop point to form pellets to be frozen; a guiding body (6) for guiding the cooling stream containing the pellets between the drop point and a transporting device; and a coolant bath (3) for the liquid coolant. The guiding body has a front longitudinal section (6a, 6b) impermeable for the coolant and a rear longitudinal section (6c) permeable for the coolant but not for the pellets. A fluid connection is located between the rear longitudinal section and the coolant bath. An Independent claim is also included for the production of pellets.
