In a machine for processing poultry gizzards, each stomach with gizzards attached after having been slit open, draped over-inside upwards-and washed as disclosed in Specification 1,196,025 on the upper run of an endless travelling chain conveyer 11 is guided by guides 17, 23 and discharged from the end of said upper run with the aid of jets of water from nozzles 33, which jets throw each opened gizzard inside downwards over a bridge 32 on a sloping shelf 29. A jet of water from a nozzle 30 is directed at the opened gizzard and under the bridge and towards portions of two counter-rotating transverse rollers provided with longitudinal ribs 24, so that the gizzard is flung inside downwards over said roller portions, which are separated by a rip 25 through which the stomach unaffected by the water jets from nozzle 33, but not the gizzard, passes. A pusher 35 actuated by a pneumatic cylinder 37 in timed relationship to the conveyer chain 11, assists in detaching the stomach from the gizzard and pushes the opened gizzard inside downwards on to the roller portions provided with interengaging helical teeth 26, which detach the lining from the interior face of the opened gizzard and deposit the cleaned open gizzard on a shoot 48, down which the gizzard slides, assisted by a jet of water from a nozzle 54, into a discharge trough 52.
