PURPOSE:To prepare a coating giving a food having various taste, flavor, appearance and texture according to the cooking method, by using a food material as the core, and coating the core with a premixed flour to form a spherical coating layer. CONSTITUTION:A food raw material having arbitrary shape is coated by mechanical forming or rolling process with a premixed flour composed mainly of starch such as wheat flour, etc. and having a water-content of 55-25%, preferably 45-35% to form a water-containing spherical coating layer. The obtained coated food may be coated with alternate layers composed of the water- containing coating layers and the oil and fat layers by repeating the coating of the spherical water-containing coating layer with an oil or fat and the coating of the oil and fat layer with the water-containing coating layer, or may be cooked immediately after the preparation, or frozen by conventional process. |
