PURPOSE:To obtain a food having spherical form from a food raw material having arbitrary shape, by coating the raw material with hydrated alpha-starch. CONSTITUTION:A food raw material having arbitrary shape is coated with hydrated alpha-starch by mechanical forming process to a food having spherical coating layer. As an alternative method, for example, potatoes are cut into large cubes, converted together with the cut scraps of the potatoes to alpha-form by heating, and rolled to collapse the scraps and coat the cubes with the collapsed scraps in spherical form. If necessary, the coating layer is further coated with a gelling agent and solidified with heat, and the obtained product is immediately cooked or frozen by conventional means. |
